🥣 What Is Lotus Root & Peanut Soup?

This is a classic Cantonese slow-cooked soup made with lotus root, peanuts, and meat. It has a naturally sweet, clean taste and is known for its comforting and nourishing qualities.

🛒 Ingredients (Serves 3–4)

  • 400g pork ribs (or chicken)
  • 1 large lotus root, sliced
  • 1 cup raw peanuts, washed
  • 1.5–2 litres water
  • Salt to taste

👩‍🍳 How to Cook Lotus Root & Peanut Soup

Step 1: Prepare the Meat

Blanch the pork ribs or chicken in boiling water for a few minutes. Rinse and set aside.

Step 2: Add Ingredients to the Pot

Place water, meat, lotus root slices, and peanuts into a soup pot.

Step 3: Slow Cook the Soup

Bring to a boil, then reduce the heat and simmer for 1.5–2 hours until the soup becomes naturally sweet.

Step 4: Season & Serve

Add salt to taste and serve warm.
