Winter Melon Soup is a clear and soothing Chinese soup made by slow-cooking winter melon with meat or dried seafood. It has a clean, mild taste that is light but very comforting.

🛒 Ingredients (Serves 3–4)

  • 500g winter melon, cut into chunks
  • 300g pork ribs or chicken
  • 1–2 tablespoons dried shrimp, rinsed
  • 1.5 litres water
  • Salt to taste

👩‍🍳 How to Cook Winter Melon Soup

Step 1: Prepare the Meat

Blanch the pork ribs or chicken briefly in boiling water. Rinse and set aside.

Step 2: Add Ingredients to the Pot

Add water, meat, winter melon, and dried shrimp into a pot.

Step 3: Cook Until Clear and Sweet

Bring to a boil, then reduce heat and simmer for 1–1.5 hours until the soup is clear and lightly sweet.

Step 4: Season & Serve

Add salt to taste and serve warm.
